After a few decades, I am back to eating eggs (minus the artery clogging bacon & hash browns). They lost their evilness some time ago. Studies show that eggs actually improve the cholesterol profile. They raise HDL (the good) cholesterol and increase the size of LDL particles, which should lower the risk of heart disease.
The guideline is one a day, but I cheat, and generally have two each weekend morning. I load them up with sweet peppers, cherry tomatoes and avocados picked fresh from the garden, and mix in mushrooms, onions and Kalamata olives. A sprinkle of grated cheddar, a few dashes of Tapatio Hot Sauce, and a chilled glass of fresh orange juice rounds it all out nicely.
