My Perfect Pizza

2 cups Antimo Caputo Tipo 00, 2 cups general purpose flour, 1 cup organic whole wheat flour, 1 tablespoon yeast, 1 tablespoon salt, and 2 cups of water. Five cheeses, a sprinkle of organic burger, onion, sweet pepper mushrooms, black olives and fresh basil if available. Hot peppers and garlic optional (but recommended). Brush the crust with olive oil!

This makes two pies. Bake at 550° F for 15 minutes. As good (almost) as anything from Napoli.
