After my tour of the feedlot yesterday, I am thankful for both heating and plumbing – those poor cattle will endure -15 F degree temperatures tonight.

Last of the Beef Meatballs Reduced in Burgundy Wine
I had one last pound of hamburger in the freezer, and in spite my aversion to beef I did not want to contribute to the 40% of the food that America throws out routinely – so I made meatballs in burgundy. Sautéed mushrooms, onions, red, green and yellow peppers in grape oil. Added ripe olives and quartered artichokes – and of course a little pasta and sauce.
All of the Above Mixed Together Lacking Only the Pasta and Red Wine
Unfortunately this is infinitely better than the crap served in most “Italian” restaurants in the US.
